Cabbage and Lamb

I was trolling around the internet one day, and saw a cool idea for fried cabbage. I’ve never done anything like that, and of course, didn’t bother to read the recipe. I have a tendency to do that, look at pictures and move along. So I was on Good Eggs one day, and one of my safe farms was offering Organic Cabbage. I totally bought some, remembering the picture I had seen. When it arrived, I peeled back all of the outer layers (It’s an unfortunate safety thing that all Corn Free people seem to do), and ate a piece. STOP THE PRESSES. It was sooooo good. I had never had such good raw cabbage before. It was sweet, juicy, crunchy, everything you could ever hope for.

If I could go back and do anything differently, I would tell you to start with the meat first or add the cabbage at the same time. I made the mistake of starting with the cabbage alone because I was unsure of how long it would take to cook. I was on the verge of burning it. in the end.

I want to share something with you that the kids have deemed to be quite delicious. I have to admit, by looks alone, I didn’t think that this one was going to be a winner. Then they ate some, and begged me to make more. As usual, I thought they were messing around so I wouldn’t feel to bad about making a bad mix, but turns out, 2 batches later, they were being sincere. Paleo & GAPs Organic Honey Mustard Chicken

I love honey mustard. Like, seriously, love it. The kids, not so much. Too bad. Eden Organics makes a stone ground brown mustard that I can tolerate, and I like to mix it with Organic Maple Butter to pretend that it’s honey mustard since I can’t tolerate honey :/

I say all of that to say that I’ve been wanting to make a honey mustard something. At first, I thought about making it as baked chicken strips. Then I realized I wanted it to be Paleo & GAPs friendly, so I didn’t want to go that route. In the end, I felt that it turned out well, and The Papa and Kid Three enjoyed this the most. Kid Four really enjoyed the cauliflower rice.

Traveling With Food Allergies, part 2

Welcome to Part 2 of the Traveling Series. This part will cover the night of departure, and the first full day of the trip, and a bit of what the kids did without me.

The Night of Departure
As expected, they didn’t leave on time. I was beyond exhausted, but of course, couldn’t go to sleep because I was trying to get them out of the house. As soon as they were gone I was out.

Meanwhile, in an RV far far away, well, not that far… The Papa and Grandma were driving the 4 kids to an RV park in Morgan Hill, which is south of us, by maybe a couple of hours? Maybe 90 minutes. The idea was that they would skip over all of the morning traffic, and “save” hours of travel time. It worked OK. Read More

Free and Friendly Foods Peanut Butter and Jelly Cookies

Peanut Butter Jelly Thumbprint Cookies

After having success with the Peanut Butter Dough Ball Bites, I decided to go all in and try something else. That’s what it’s like with a severe corn allergy by the way. Little baby steps to see if something will make you sick.

As a kid, I LOVED peanut butter and jelly. But here’s the thing: I only ate them separately. If you were to make me a sandwich, I’d take it apart. Lick the jelly off the bread, then lick the peanut butter off the bread, then eat the bread, careful to eat the lower right corner last. Yes, I know I was a weird little kid. Point is, I love the idea of PB & J.

About 2 years ago, I discovered Inna Jam, and to my surprise, it didn’t make me sick. It has got to be the only jam I’ve found without extra junk and they source their fruit from a few safe farms that I can eat from. It’s worth the $10 + price tag, especially Peach. Oh the joy. I digress.

I normally don’t like baked cookies. Both Kid Two and I are much more dough people. However, these were great. I had first thought about just making more dough balls and using the jam as a dip, but I thought I’d go wild and try something else. The Papa loved these, and he’s like, wait, these are Paleo? Let me have another one. I can also testify to their goodness, especially after they’ve cooled completely and the next day too. And yes, I did eat 2 for breakfast.
