Allergy Free Organic Mashed Potatoes Done Two Ways

Every so often, I like to find a new way to do something old. Who am I kidding. I do this all the time. For those of you that know me, you know how much I don’t like doing the same thing over and over again. The kids know this so well, which is why they end up having the weirdest items added to food, like these mashed potatoes. You would have laughed had you seen the looks on their faces when I asked if they thought maple in mashed potatoes would be a good idea. I get looked at like I’m crazy more times than you’d think. YET!! I hear “oh my goodness this is delicious” more times than I can remember. I guess crazy in my world is delicious in theirs, or vice versa? Hehe. On a side note, thanks for reading. I get so many giggles when I write these little messages to you. I hope you can hear the smile in my fingers.

Spicy Maple Bacon Mashed Potatoes
Allergy Status: Gluten Free, Wheat Free, Dairy Free, Egg Free, Soy Free, Nut Free, Peanut Free, Yeast Free, Cane/Refined Sugar Free, Onion & Garlic Free, Diabetic Friendly

Vegan Sweet Onion Mashed Potatoes Ingredients:
20 ounces Organic Gold Potatoes
3 TBSP Dairy Free Butter
1 tsp Sea Salt
3/4 cup Milk of Choice
2 TBSP Organic Maple Sugar
1 TBSP Organic Dried Chives
2 TBSP Organic Caramelized Onions

Spicy Maple Bacon Mashed Potatoes Ingredients:
20 ounces Organic Gold Potatoes
3 TBSP Dairy Free Butter
1 tsp Sea Salt
3 TBSP Organic Maple Syrup
3 TBSP Wellshire Bacon Bits
2 ounces Organic Milk of Choice
pinch Organic Crushed Red Pepper

Instructions:
Making these is rather simple. First, wash, peel, and cube your potatoes. Next, boil them for three minutes, then reduce the heat to a simmer, add a lid, and wait. Depending on the size of your cubes, it will take about 20 minutes of simmering for the potatoes to be ready. You’ll know they’re done when you can easily pierce them with a fork. Once done, drain your potatoes (in a colander if needed), and return them to the pot. Add the ingredients of choice for your method (Sweet Maple or Spicy Maple), and mash. Don’t have a mash potato maker? You can use a large fork, but it will be a little lumpy, and that’s totally OK. The lumps will add a bit of a cool texture.
