Organic Stuffed Beet
The stuffed beet cup was something I wanted to do just for the fun of it. I think as a side dish, especially at a small dinner party, it’s fun to have around. It’s really simple, and you can interchange the steamed veggies with whatever you fancy. The kids really like steamed broccoli and carrots, so that’s what I went with. A little note about flavor: Kid Two, Kid Three, and I all agree that a roasted beet has the texture of a buttered potato. We don’t know why, they just do. Enjoy!

Salmon Stuffed Ronde de Nice
Last week was Stuffed Vegetable Week here on the blog, and I didn’t have enough time to share this gem with you, so here it is. This was deemed to be juicy and delicious by The Papa, the kids, and one of their cousins who was over for a visit.
A note about the honey. You see, I was measuring it out when the whole lid popped off and honey went everywhere. If I had to guess, it was 2 TBSP. I was planning to use 1.5, but there could be as much as 3 TBSP, so please use your best judgement on this one. SO sorry. And we didn’t even get a funny picture of it happening.

Organic Cajun Stuffed Peppers
I have a riddle for you. What’s pretty on the outside and not that great on the inside? If you read the Purple Pepper Post, you’ll know, it’s the orange peppers! Sometimes you get a bad one when it’s organic 🙁
When I was a kid, I had something so delicious, but I kinda only sorta know what it was. It was red potatoes, but with Cajun seasoning… or crab seasoning… see, I kinda don’t remember, but I know that it was eaten near New Orleans, so it must be Cajun inspired at the least. In addition to that, I LOVED red beans and rice as a child. I could eat bowls of that stuff, and that’s where the inspiration for these peppers truly come from.
Now, some of you may know that the kids, especially Kid Two, hates spicy things. I have to always keep that in mind as I’m creating things, especially anything Cajun inspired 🙂 Needless to say, everyone really enjoyed the meal, however, I can safely say that if you’re a fan of spice, please feel free to add much more.

Organic Lemon Chicken Stuffed Purple Pepper
We were had by the peppers. I tell the kids whenever this happens that this is the “price” we pay for organic. You win some, you lose some. You’ll see in the image that there are 5 cute little peppers, one for everyone. However, much to our surprise, all but one was bad on the inside. What amazed us is that they were all so perfect looking on the outside. Yet, I was able to do a small victory dance because hey, at least I got one to take a picture of.

Simple Stuffed Turnip Salad
Just because it’s stuffed veg week doesn’t mean everything has to have a long and complicated title. Even us foodies at heart have to take a break sometime 🙂 Although this is a very simple idea, it takes real planning. If you use a large turnip, which I would suggest, you have to bake it before you hollow it out. It’s simply too hard to accomplish when it’s raw, unless you have access to some really cool commercial kitchen heavy duty tools. Or maybe a sawz-all.

Organic Vegan Stuffed Eggplant Parmesan
What’s this? Vegan eggplant parm you say? Well yes I do say! I was a bit afraid that the kids wouldn’t be too receptive to the idea, but interestingly, they all ate everything they were served. What I like about this particular recipe is that it’s vegan friendly. You can always sub in a protein of choice, however, this is way cool because nothing went to waste. OK, here we go.
Allergy Status: Gluten Free, Dairy Free, Egg Free, Soy Free, Vegan, Paleo Compatible, GAPs Compatible, Nut Free Compatible
For Paleo: Use Parma! Vegan seasoning, or a parmesan cheese if you’d like
For GAPs: Use a safe cheese.

Stuffed Organic 8-Ball Squash
I saw the inspiration for this on Instagram (@lchf_italian), and thought, I should totally stuff a squash. Then I realized, Stuffed Veggie Week!!! It’s not a thing yet, but it will be in a few weeks. Just know that I’m lovingly working on recipes as we speak every day to make a neat week of recipes to share. Until then, here’s the first of the stuffed veggies.
