Allergy Friendly Crispy Oat Apple Pie
I’ve been wanting to use the pressure cooker and/or slow cooker for some time now to make a dessert. This was our first attempt, and it came out VERY well. Using a pressure cooker or slow cooker can enhance the overall flavor, and in some cases, save you time. In the case of the pressure cooker, it takes about 20 minutes and presto, dessert is cooked. If you were to cook those apples in the oven, it would take about an hour. On the slow cooker side of things, while it takes much longer, you have the option to add everything before you leave for work, and set a delayed start time. Either way, I see these tools as a real win.
Just a friendly reminder when working with oats- if you are wheat allergic, or have celiac disease, it’s important to use certified gluten free oats. We get ours from GlutenFreeOats.com, and I have to say, I’m quite impressed with their growing standards, and the measures they take to keep people safe. They also happen to be the only corn free oat product I’m aware of. We use their oats for overnight oats, homemade oat milk for the bakery, and of course oat flour for baking. I’ve also recently gotten into making tortillas using the oat flour as well.

Allergy Friendly Green Gummy Bears – Vegan, Corn Free
This is the final installment in our gummy bear series that features Solti juices. This was our favorite gummy to eat by far, however, it had some leaking issues after being in the fridge for a while. I’ve seen this before with these types of ingredients. It’s nothing to be concerned about in my opinion, especially if you have a limited range of ingredient options.
Let’s talk texture. These were FANTASTIC. They were a cross between a hard gummy, and finger jello. I personally called them gummy bears, but everyone else kept saying finger jello, so I finally had to cave and agree with them. They’re very soft to eat, and have a melt-in-your-mouth-like experience. Are they close to a traditional gummy bear? Not even close. Are they amazing if you can’t have a traditional gummy bear? Absolutely.

Allergy Friendly Watermelon Gummy Bears – Vegan, Corn Free
Today I wanted to share some of our gummy bear journey with you, as part of the Solti gummy bear series. We started trying to make Paleo-ish, corn free, gummy bears some time ago. It started with pectin, then we moved on to agar. More than anything, it was all about trial and error, and of course, a little mad science. The Watermelon Gummy Bears pictured below are almost identical in texture to the Charcoal Gummy Bears we shared recently. However, I wanted you to know more about the “failed attempts” that we made, that honestly, were pretty awesome. I’ll never forget the excitement we all had when we made the first batch and ended up with something so close to jelly. Our second attempt was much closer to finger jello, like the Green Gummy Bears we shared.
The takeaway here is to never stop trying to make new things, no matter what your food allergies, intolerances, or special diet may be. Find any and every way that you can to get creative, and eventually, you’ll get something that works, or better yet, you’ll get something awesome that you weren’t expecting.

Allergy Friendly Charcoal Gummy Bears – Vegan, Gluten Free, Corn Free
This was such a HUGE win. If you’re allergic to just about everything, these are the gummy bears for you. However, I have to say this: if you can have things like gelatin, or something like Krysten’s Kitchen Green Gummy Bears, please please please use a traditional recipe. These gummy bears, as awesome as the are, take some getting use to. They don’t behave the way you may be use to… they are a little on the chewy side… they’re different, and greatly loved.

The Ultimate Pork Burger – Gluten Free & Top 8 Free
Before I jump into things, I have to share this quote with you. It’s from Kid Two who is GF, DF, EF, and more. When he was served his burger he said, “I’m kind of afraid to eat it. It looks like a real cheese burger.” My heart melted and I was SO happy to hear this. I told him it’s moments like these that make me do what I do. There isn’t a restaurant anywhere so far that could have served him something like this safely, and I take joy in giving him these one-of-a-kind experiences.
The inspiration for this burger was simple: I wanted something huge and delicious. It also had to have a lot of moving parts like something you’d see on TV, or in an upscale restaurant. I think our mission has been accomplished.

This burger does come with a little warning: it’s time-consuming to make, but worth every minute. It took us about 90 minutes from start to finish.

Pumpkin Brownie Bars
It’s that time again! Time to start creating all things pumpkin flavored. This is our first of many new pumpkin recipes. Be sure to check back for our savory pumpkin pasta, pumpkin truffles, pumpkin ice cream, and pumpkin freezer sandwiches.
These pumpkin brownie bars came about as we were working on our candy bar project. The “cake” layer of our candy bar has been deemed amazing. With that in mind, I knew we had to try other flavors to see what would work. Rather than make a pumpkin candy bar (yes, I seriously considered it), I opted for a brownie bar just for fun.
If you’re dairy, tree nut, and coconut free, you may need to make your own ice cream at home. Making vanilla ice cream at home using an ice cream maker with a compressor is super easy, and very tasty. You’ll need to have a safe milk base, such as Good Karma Foods Unsweetened Flax Milk, or something homemade. We make homemade oat milk ice cream that’s top 8 free and corn free using the fresh oat milk that we make for our bakery. Now that you know some of the story behind this creation, on to the recipe!
