Meat Lover’s Brussels & Rice Recipe
Today I want to share with you something that the kids absolutely loved: Meat Lover’s Brussels & Rice. It was a quick lunch that I put together, but they went back for thirds. My favorite thing about this recipe: it incorporates Brussels Sprouts. I was surprised when they were much younger how much they liked meals that included sprouts, and have continued to add them when I can.
As some of you may know, we are a homeschooling family, so on rice days I’ll often start the rice cooker with veggies on top in the steaming insert before running an errand or taking the kids somewhere. When we get back, half of the meal is ready to go. This meal is no different.

Allergy Free Taco Tuesday Gorditas
Do you remember gorditas from Taco Bell? I learned about these as a kid, and thought it was pretty neat to have two taco shells in on go. For many reasons, we don’t feed the kids fast food, however, I love recreating things at home for them that I think they’d just love. This was a HUGE hit! If it weren’t for my severe corn allergy, I’m sure we’d make these more often. It was comforting to see how much the kids were willing to work to keep me safe while we prepared this meal. The Papa set up a table outside for us to work on, and of course, I didn’t touch anything. So, ready to make these? Our Allergy Kid had never had anything like it, and was blown away, as was everyone else.

Patty Melts Recipe
I loved patty melts as a child, and as I recreated these for the kids (beef and wheat free of course), I actually missed them. There’s not much that I miss, and most times I don’t realize that I miss something, but these, I tried to eat about 10 of them in my head. In my head, I feasted. Organic Turkey & Peppers over Cauliflower Rice Recipe
Do you ever feel like you have to dig really deep to find a new way to cook ground turkey? This was one of those times, and it turned out really well. Originally, this was going to be a salmon dish, but I forgot to add it to the grocery list. I know you know the feeling of “I’m so tired of cooking” so I hope this recipe finds you when you need it the most 🙂
A little reminder: Kid Two is allergic to beef, and so am I. This would be a great meal to substitute in ground beef if you’re able to have it.

Calzones! Gluten Free, Top 8 Free Recipe
Kid Three was so intrigued, and really wanted to know what a calzone was. Like with many other things, I told him to look it up. Yes, I’m one of those parents. He was SO happy to help with dinner once he knew what it was. The best part for me was when each of his siblings asked what a calzone was, he was quick to tell them to look it up 🙂 He also likes to say that these are short for “calorie zone”.
Just a fair warning, the final product is not even close to perfect in looks. As you know, I can’t touch, or eat most of the food I create, so the kids did all of the touching for me. This means the kids made these calzones with their own little hands, with lots of love.

For GAPs, Yeast Free, & Cane/Refined Sugar Free: Make a fresh pizza dough at home with safe-for-you ingredients.
For Vegan: Use a meat substitute of choice, or only fill with cheese, and vegetables (such as peppers, extra onion, mushroom, and tomato chunks) Read More
Creamy Turkey Noodles Recipe Gluten & Dairy Free
