Paleo & GAPs Organic Honey Mustard Chicken
I love honey mustard. Like, seriously, love it. The kids, not so much. Too bad. Eden Organics makes a stone ground brown mustard that I can tolerate, and I like to mix it with Organic Maple Butter to pretend that it’s honey mustard since I can’t tolerate honey :/
I say all of that to say that I’ve been wanting to make a honey mustard something. At first, I thought about making it as baked chicken strips. Then I realized I wanted it to be Paleo & GAPs friendly, so I didn’t want to go that route. In the end, I felt that it turned out well, and The Papa and Kid Three enjoyed this the most. Kid Four really enjoyed the cauliflower rice.

For AIP: Omit Mustard, consider adding other herbs such as rosemary or thyme.
2 pouches Organic Chicken, cubed (approximately 4 medium-large chicken breast, but you could use thigh for more flavor)
9 TBSP Raw Honey (I used a dark, runny, variety)
2 tsp Sea Salt
1 tsp Organic Garlic Granules
6 tsp Eden Organic Brown Mustard
Organic Dried Parsley for Garnish
For the Organic Cauliflower Rice, I used enough shredded cauliflower to feed 4 people. I cooked it on the stove top in Organic Extra Virgin Olive Oil, and added Sea Salt, and Organic Onion Granules.
For the chicken: Heat a large non-stick pan no high heat (425) and add the chicken. I didn’t add oil or butter. Allow the chicken to cook, stirring as needed to prevent the cubes from sticking together too much. When the chicken is about 75% done, add in the other ingredients. Continue to cook until the chicken is cooked all the way through. Remove from heat, and cook your cauliflower rice. Alternatively, you could cover with a lid and simmer, however, this may require more liquid ingredients to prevent burning.
This is a very simple dish that comes together quickly. Enjoy!
