What to cook, oh what to cook? We have a rule that if I can’t take a picture of it (as in, it’s something new that we need a photo of), I’m not cooking. It’s my polite way of going on strike. That mask is not nearly as comfortable as it appears.

I know I can’t be the only one that has those days where you simply have no idea what to prepare for hungry children. On days like these, smoothies are a great choice, but perhaps I wasn’t in the mood for making one. Instead I decided to look through what was in stock, and there was a plethora of sweet potatoes (thanks Costco). I decided to pull out several and start peeling, hoping something would come to me, and come it did. Once the idea was developed, I was rather excited to make breakfast.

In today’s post, I’ll be sharing with you the joy of Rosemary Sweet Potato Bites, and the somewhat joy of what was supposed to be Sweet Potato Hash Browns. They didn’t behave the way russet potatoes do, so I had to think on my feet. I’ll start with the recipes first, then move on to the pictures. The allergy status is included with each recipe.

Rosemary Sweet Potato Bites

Allergy Status: Wheat/Gluten Free, Dairy Free, Egg Free, Soy Free, Nut Free, Peanut Free, Yeast Free, Corn Free, Cane/Refined Sugar Free, Sesame Free, Legume Free, Diabetic Friendly, Paleo, AIP, Vegan, Nightshade Free Compatible, Low Histamine Compatible

For Low Histamine & Nightshade Free: Use an alternative/homemade season blend instead of Bragg.

Ingredients:
2 large Organic Sweet Potatoes, washed, peeled, cubed into small bites
3 TBSP Organic Extra Virgin Olive Oil
2 tsp Organic Rosemary
1.5 tsp Organic Dried Parsley
1 tsp Bragg Organic Herbs and Spices
1 tsp Sea Salt
1 tsp Organic Balsamic Vinegar

Directions:
Heat a large non-stick on high heat (400) and add your potatoes and olive oil. Allow them to brown a little bit before adding the seasonings and vinegar. Brown, cook and stir regularly for 8 minutes, then remove from heat. Line a large tray with parchment paper, transfer the potatoes to the tray, and bake at 425 for 12 minutes.

Vegan Sweet Potato Hash

Allergy Status: Wheat/Gluten Free, Dairy Free, Egg Free, Soy Free, Nut Free, Peanut Free, Yeast Free, Corn Free, Cane/Refined Sugar Free, Sesame Free, Legume Free, Nightshade Free, Diabetic Friendly, Paleo, AIP, Vegan

Ingredients:
2 Organic Sweet Potatoes, shredded with a cheese grater (or something similar)
3 TBSP Organic Maple Sugar
3 tsp Sea Salt
3 tsp Organic Ground Cinnamon
Butter/Fat/Oil of Choice For Cooking

Directions:
In a large bowl, combine all of the ingredients. I used large forks to get everything well mixed. Heat a large non-stick pan on medium-high heat (380). Add you butter/oil/fat of choice, and allow it to heat/melt a little before adding the sweet potato. Don’t over-fill the pan (you’ll have to cook it in batches), and use enough oil/fat each time to cook your potatoes. Mix regularly so your potatoes don’t burn. It takes approximately 12 minutes to cook.

 

Bacon Sweet Potato Hash

Allergy Status: Wheat/Gluten Free, Dairy Free, Egg Free, Soy Free, Nut Free, Peanut Free, Yeast Free, Corn Free, Cane/Refined Sugar Free, Sesame Free, Legume Free, Nightshade Free, Diabetic Friendly, Paleo, AIP

For Corn Free, Paleo, and AIP: Be sure to use the bacon that’s right for you.

Ingredients:
2 Organic Sweet Potatoes, shredded with a cheese grater (or something similar)
3 TBSP Organic Maple Sugar
3 ounces Bacon, cut into very small pieces (or bacon bits)
3 tsp Sea Salt
3 tsp Organic Ground Cinnamon

A note from Kid Two: He really really really likes the bacon, but felt I used a little bit too much dairy free butter on this particular batch as it was on the rich side. Be sure to keep an eye on how much you’re using.
