We teamed up with Bentology to bring you this recipe (and another that will be posted soon). They have a really great lunch product you may enjoy. The premise is that it helps with portion control. Their bento-style lunch box comes with 5 containers, each with an image of what should go inside, such as vegetables. It’s a great visual reminder for adults who want to eat healthy. Before we get started, Constructive Eating sent us their product, free of charge, to be used and reviewed. Alright, let’s get talking. This product… it’s EPIC. You know how honest I am. I’d never say that unless I meant it. The Papa, The Kids, and I all have our eyes on the eating utensils, lol. I can say that for the most part, we’ve been quite blessed with having kids that weren’t too picky when it comes to eating. However, our oldest, up until about age 10 could be a problem. I suppose the others were a bit picky in their early years too. I am over the moon in love with the concept behind this product. It’s simply way too cool if you have a picky eater. Now, I know some of you come from the background of “not playing with your food” however, have you seen the plates? As a graphic designer, I would have loved to have this when the kids were younger so I could make my own inserts. It would have been never ending fun for me, and them.

The inserts that we have seen are the ABCs, and different kid themes such as space, the beach, the farm, etc. There was also a place-mat included, but honestly, the other items totally overshadowed the place-mat. Don’t get me wrong, it’s a nice addition to the set, especially if you want your child to have the full experience. As an adult with older kids reviewing it, I could take it or leave it. The utensils on the other hand, I REALLY want to take them for myself. They’re just too cool.

Today, I present you with M is for Meatball. This was a recipe that turned out really well. It was my first time working with ground bison, and the kids, and the extended family, all really enjoyed this creation.

Organic Turkey, Asparagus, & Japanese Sweet Potato

This is easily one of my favorite dishes to make for the kids. They like to call asparagus “a bad word” yet, they eat this meal happily. Hence, it’s one of my favorites to make. You parents out there know what it’s like, trying to get kids to try new things… it isn’t always easy. Hopefully this meal gives you a new way to have your kids try something (or picky eaters of any age) new and different.

Before we get into the business end of things, let’s talk about sweet potatoes. You have several varieties that have an orange flesh. There’s also purple sweet potatoes, which are more starchy than the orange fleshed types. Then you have Japanese Sweet Potatoes, one of my absolute favorites to work with. They’re starchy, but have a much more muted flavor than the orange fleshed sweet potato. I find they make amazing oven baked rounds. Finally, you have yams, which people call sweet potatoes. Although they’re similar, they’re not the same.

I’ve been finding more ways to incorporate brussels sprouts into everyone’s diet around here, and this has been one of the best ways yet. Everyone who proclaims to dislike brussels sprouts asks for seconds of this dish. How fun is that? This comes together quickly, and can be served over rice, cauliflower rice, or with the potatoes we posted yesterday. Enjoy!

I don’t know what inspired this one. We’ve done salmon in many different ways, and sometimes, I get tired of doing the same old, same old. Perhaps that’s where it came from this time. I also wanted to make sure that this one was really allergen free, so that many people could enjoy it together. I think that’s what really gives me a feeling of satisfaction lately. The thought that I’ve somehow won a competition called, “How Many Food Allergies Can You Conquer in One Dish”, while still keeping it interesting, and tasty. I suppose it’s like a game show in my head, except I’m the only contestant. And you’re the audience.

It’s not often that I get to share my food with you, but today I will. I think I generally don’t because I see it as too simple, or sometimes a bit too out there, even for people with food allergies. I’m also fully aware that I have the strangest eating patterns. I think it’s how I cope with the disease. Many of you out there I’m sire know exactly what I’m talking about.

The two dishes here are both tuna based, and were delightful to eat. For those of you that really know my story, you know that I’m allergic to just about everything I eat. I was given a choice – eat was gets to me the least, or starve to death. There are no tubes that can save me, because I’m allergic to the food solutions. I can’t do what most people do, because even water is an issue. After having these meals, I can say that I won’t be eating them again any time soon, however, for a few days, it was sort of nice.
