Allergy Free, Organic Maple Chicken Sausage & Rice

During basketball season, I thought this would be fun to serve to the team, so we volunteered to bring the after game snack, and this was the result. We also sent cupcakes 🙂 When The Papa came home, he told me that another parent asked, “Who catered?” What a lovely compliment! Everyone enjoyed the dish, and really loved the cupcakes. That’s a win-win in my book, even though we didn’t win the game.

What I really love about this meal is the chicken sausage. Our Costco carries an Organic Maple Chicken Sausage! What’s not to love? It’s one of the few sausage products I can purchase that everyone can enjoy together. I normally purchase 3 or more at a time. There are 3 smaller packs to the pack, and the kids get to use them whenever they’d like for breakfasts and lunches.

Kaffir Lime Curried Fried Rice

This was a fun experiment that I thought I would share. I was scrolling through Good Eggs a while back, and came across Kaffir Limes, sometimes called Makrut Limes. Whenever there’s something new listed, I like to read the descriptions, and this one really caught my attention. It said that it would be the perfect addition to a good curry. I went about making our Sweet Curry Chicken Fried Rice, but also added the juice from the limes, as well as lime zest! The kids said it was too lime-y, and the wished I had left it out. What do they know? They’re just children with childish palates. But seriously, I may have overdone it with the limes a tad bit. When there’s a recipe in place, I’m sure we’ll write all about it. Do you ever marinade your meats? I usually don’t, but have been wanting to try it more and more. I tried it with fish many years ago, but learned the hard way about using lemon, and doing it for too long. You can alter the texture of the meat… Ahhh, blissful youth. This time around, I decided to go with something I’ve heard about here and there, so I figured I wouldn’t mess anything up. It was indeed a great starting point. Interestingly, what I loved the most was the glossy, reflective image in the end. It looked like something out of a magazine, in the most delicious way possible.

It’s Friday! I don’t know about you, but I always have this “happy let’s party” vibe on Friday mornings. I usually end up making pizza to celebrate. The kids have come to love Friday lunches, and for good reason. Have you seen the other mashed potato creations this week? There were Mashed Potatoes Done Two Ways, and Potato Soup. Well, with the soup leftovers, we made pizza. Kid Two asked me while we worked on the soup if it would be a good idea to ass mashed potatoes to a pizza. Then he said, never-mind, too many carbs. I thought about, and said that because our soup was a little on the pasty side, rather than runny, we could try to use it as a sauce. When ever the kids come up with an idea like this, I try to encourage them by finding a way to make it work. I think it’s something all Food Allergy Parents should try to do, assuming they don’t already. Allergy Kids are just that – kids. They have to live a long lengthy lifetime, so it’s good to train them young to think outside the box. If we can give them a joy for cooking, baking, and all things kitchen related, it will allow them a greater sense of independence when they’re older, and will also help make sure they don’t go hungry. Or get caught in the dreaded trap of being bored from eating the same few meals again and again.

A while back, we had a fun exchange of samples with San Francisco Salt Co. They got to try the Free and Friendly Foods top 8 free, vegan cupcakes. We received a beautiful box full of all sorts of salts to try. The hand written note was what really got me. This will be the first of many recipes that features one of their unique salt flavors. Up first, Cherry Smoked Salt. When the kids and I smelled the salt, we were in love. But wait! There’s more! The best part of this meal was right after the sampling. As you know, I can’t eat the food, so the kids sample it once I think it’s ready, and they let me know if changes are needed. Kid Three was the first to sample. He took a bite, and his eyes went wide as he chewed. He shouted “Oh, there are so many flavors! I love it!!” Yes dear friends, that made my day. So here’s the recipe. Hope you enjoy it as much as the kids did.

We made a very special dish for someone recently, and The Papa says it turned out well. I will say, I don’t think this one is very kid friendly. It’s definitely for the grownup, or kids and teens with adult tastes. Additionally, I feel that this is a great springboard for making something awesome. Have some extra Thanksgiving stuffing? You could totally add that in for something extra tasty. Apples would also add a lovely touch.

Kid Three wasn’t feeling well, so I decided to change course make the kids soup. They said it turned out really well, so it’s a good thing I wrote everything down. As I was getting ready to prepare the soup, I had the thought to add some unconventional soup ingredients. I spun it to the kids as “it was extra healthy and healing” and I think that made them like it even more.

Free and Friendly Foods Organic Chicken Pasta

Organic Chicken Pasta (Sauce)

Can you believe Non-Traditional Pasta Week is almost finished? The week has zoomed by so fast. I hope you’re having a great time in the kitchen trying new recipes! Today’s pasta sauce was inspired from Sweet Curry Chicken Fried Rice. It’s in our Everyday Meals volume one cookbook. It also comes from something I use to make the kids when they were much younger – pan-fried chicken thigh. I would prep chicken thigh, and let it cook in butter. Honestly, it was that simple. Add a little salt, and they were all happy. In this case, I wanted to make it a bit more fancy, but may I be honest about the peas and carrots? I love creating meals that don’t require getting extra dishes dirty. If you’re not a fan of them, leave them out. I’m a firm believer of making the kids eat vegetables with almost every meal. No matter what, I hope this brings warmth to your tummies!

Serious Tip: If you have a large family, buy chicken in bulk at a place like Costco. Spend an afternoon prepping it all, and freezing it in bags with the quantities you use most. In our case, there are always several quart size baggies in the freezer with 2 organic chicken breasts cubed, and ready to go. When you do your meal planning, keep your freezer stock in mind, and thaw it when needed. It makes life SO much easier in the long run.

Rosemary Ginger Chicken Salad, A Three Course Meal

The great part about the main course for this three part meal is simply how fast it comes together. I also feel that this pairs quite well with the Hasselback Potato. Everyone really enjoyed this, and usually don’t like rosemary. If you’re preparing the full three courses, start with the Chocolate Ice Cream first while your oven preheats. Then, make the potatoes and get them in the oven. You’ll want to get this dish in the pan when there’s 10 – 15 minutes left on the potatoes.
