Allergy & Grain Free Veggie Stuffed Pork & Cauliflower Rice
We teamed up with Bentology to bring you this recipe (and another that will be posted soon). They have a really great lunch product you may enjoy. The premise is that it helps with portion control. Their bento-style lunch box comes with 5 containers, each with an image of what should go inside, such as vegetables. It’s a great visual reminder for adults who want to eat healthy. Sweet Balsamic Tuna & Avocado
Simple, Delicious, Awesome, Epic, Wonderful… This dish is everything that’s right with the world. It’s soooo yummy. Like, just yes. It’s one of the very few (four) times the kids and I have eaten something together in past several years. Here and there they sample some of the meals I make for myself, or I may use something simple I eat as a springboard for a meal for them. This however, they were more than happy to gobble up.

Allergy Friendly, Paleo, Maple Garlic Ahi
I’ve found myself over-experimenting with maple as of late. However, it’s been a real win-win-win for everyone. The kids are happy, readers get new recipes, and I get to use maple. It’s one of my favorite sweeteners for a very good reason: it’s one I can tolerate without getting sick, and I’ve seemed to find a brand I can use, sort of. Too much sugar of any kind is never good for me. Maple is also vegan and diabetic friendly, so there’s even more wins. OK, back to the ahi.
Costco sells wild ahi fresh where we live, however, it is a little pricey. We pay on average $25 for the ahi, and it will make one dinner. Now, divided over several people, it’s not so bad, but by comparison, canned tuna is less expensive. Needless to say, it’s something that I make the kids every couple of months. At Costco, I usually purchase two packs of ahi, make one fresh, and pre-slice the second and freeze it.
I’ve been making ahi for the kids for years, and I knew it was time to do something different, and this was a MEGA Hit! Kid Four isn’t a huge fish fan, and usually only eats a couple of pieces. The others sacrifice themselves and offer to eat the extras for me. I know, how brave, noble, and thoughtful of them, hehe. However, this version, Kid Four was more than happy to eat several pieces, and even asked for seconds.

Salmon Cookup (and a funny story)
We have a splatter guard that we like to call the Captain America Shield. We didn’t think to use it. In hind sight, this whole situation was funny because Kid Two was helping me, and we were so excited about the dish we were working on. Once we had everything just right, we got ready to cook. We put the first patty in the oil, and instant fireworks! Bits of maple had ventured off into the oil, causing splatter all over the place. I quickly realized there was no way we’d be able to shape all of the patties and get them into the oil safely, at least, not the way we designed it. So we switched to a ground salmon dish. I don’t think there was really a lesson to be learned, rather, a really funny story to share. We couldn’t stop laughing at the whole thing after.

Organic Cheeseburger Salad
We teamed up with @ibcgourmet on Twitter, to bring you International Salads. Bring from India, @ibcgourmet opted to create a delicious Tandoori Chicken Salad. I personally can’t wait to give her recipe a go. Here’s the link to her blog post. Here in the United States, I thought of Cheeseburgers. They seem so American, so I present you with an Organic Cheeseburger Salad.
Have you ever been to Red Robin or BJ’s? I’ve only been a few times, maaaannnnnyyyy moons ago, and that’s what came to mind when I thought about an American cheeseburger. There’s also In-n-Out, and a few other iconic places, most of which I’ve never been to, and probably won’t be able to visit. With all of that in mind, I had thought of so many fancy ways to make a salad, and that’s when it hit me: simple. Sometimes we get so caught up in long titles for our dishes we forget to feature the main ingredients. This time, I did just that. This is a very flexible recipe, and you can add additions to your salad, just as you would to your cheeseburger.

Organic Pulled Prok
Online, we’ve been able to connect with a lot of new people. One of them, @theunskilledcavewoman on Instagram, loves using her combo slow cooker. We posted about pear dish a while back, and she used that as an idea to create something totally rad in her pot. I had been thinking about a slow cooker for a while until that point, and that’s what pushed me over the edge. We ended up getting a combo slow cooker and pressure cooker. I’ve always wanted both, and Kid Two and I saw a really cool demo last year and knew we needed it. Fast forward, and we get one. The Papa immediately says, “We have to have pulled pork!” So that’s what I set about making. Pulled pork in the pressure cooker, then slow cooked with sauce. Although this is a labor intensive and time intensive project, according to everyone that ate it, you won’t regret it at all. If I could go back and do anything differently, I would have made more so there would be more leftovers. They ate most of it the night I made it. Not sure if I should be happy or sad about that.

Organic Spinach, Chicken, & Mushroom
We made a very special dish for someone recently, and The Papa says it turned out well. I will say, I don’t think this one is very kid friendly. It’s definitely for the grownup, or kids and teens with adult tastes. Additionally, I feel that this is a great springboard for making something awesome. Have some extra Thanksgiving stuffing? You could totally add that in for something extra tasty. Apples would also add a lovely touch.

Crunchy Almond Butter Cups
Did you know that Kid Three can’t have peanut butter? He’s not allergic, but it gives him terrible stomach aches. With that in mind, I try to make him candy cups every so often, and these were a hit. For the first time, I tried using crunchy almond butter, rather than creamy.
