For Nut Free: Omit chopped almonds. Pumpkin seeds are a great alternative for added crunch.

Paleo Fried Zucchini

This was our first time making a fried vegetable, and it was SO upset! Here’s why: As soon as I had the first few slices ready, certain people who will remain unnamed walked by, and ATE THEM ALL! Then, they said, what? They tasted so good I couldn’t stop eating them… As if to compliment me… I hadn’t even gotten a picture yet. Sigh. You see the crazy life I have to live? Needless to say, everyone really wanted to have the last bite. They were also more than willing to eat the few that were a little overcooked. I will say, I felt like these required a lot of work, so maybe it’s great for one person to chow down on. Making them for a large crowd may be a little trying to one’s patience, yet, truly a labor of delicious love. I will try making these again however, but next time I’ll see if there’s a faster way to get these done.

Before we get into things, let’s talk strict Paleo first. For these to be egg free, we used a vegan egg replacer, which doesn’t claim to be Paleo. It’s essentially gums working together to make a binder. If you are strict Paleo, or AIP, you will need to use an egg or egg replacer that you’re comfortable with. I will add that you may not even need the egg at all. I think water could do the same job, as you only really need something to hold the tigernut flour in place.

In addition to the egg, there’s the question of cheese. Some Paleo eaters enjoy cheese, while others don’t. Here’s a link to a great site with Paleo cheese alternatives you can make at home. See? Everyone wins!!

Sometimes, I really feel like the kids are messing with me. I’ll make something, and it will be my first attempt, and they rave over it. I really think they’re joking. This was one of those times. Other times, I think have it SO right in my head. I have my long and drawn out foodie title, and nope. No one likes it. You know the saying, it’s falling on deaf ears? I feel like some of my greatest creations have fallen on deaf taste buds. The can’t hear the nuances of delicious that’s been crafted with love. I digress. Back to the tasty waffles. What’s this? Vegan eggplant parm you say? Well yes I do say! I was a bit afraid that the kids wouldn’t be too receptive to the idea, but interestingly, they all ate everything they were served. What I like about this particular recipe is that it’s vegan friendly. You can always sub in a protein of choice, however, this is way cool because nothing went to waste. OK, here we go.

Free and Friendly Foods Carrot Cake Cookies & Crumbles

Carrot Cake Cookie & Crumbles

When I was messing around with carrot cake, the thought came to me: cookies! What if I could take the essence of carrot cake and morph it into a cookie? I mean, who doesn’t like cookies, right? My first thought was that I wanted to have something similar to a ginger snap, a little on the harder side of life. Instead, I ended up with something that’s a lot like Citrus Cloud Cookies (in our Sweets and Treats volume one book). Then, something really cool happened. They fell apart. As they aged, the more delicate they became, and that’s when I knew this was the coolest crumble ever. It’s a new thing I’m going to be telling everyone about. This is great on top of ice cream, or as a garnish on the Carrot Cake Cupcakes. See, not too bad, right? But seriously, if you make these, be gentle and kind to them, and eat them fresh, unless you plan on using them as a crumble.
