Vegan Mashed Rutabaga Recipe

This was another almost-casualty of the Stuffed Veg Week series… Did you know that if you buy a large rutabaga, then try to hollow it out in its uncooked state, you will fail? Not just a little fail, a really big one. You’ll notice in the second photo just how far I got before I realized how insane this idea was… Needless to say, the final result (I’m told) was rich, buttery, and delicious. The Papa also said that “it’s different…” It makes me laugh when he says things like this because he’s always having to try new things, strange things, things that fail, and it can be tough to be a taste tester for someone who grew up on graham crackers and milk.

Tomatoes & White Fish Recipe

For those of you that have been on this journey with me for quite some time now, you know how MUCH I want to go to a restaurant that costs about $400 a person, and leaves you feeling hungry when you leave. hehe. No really… I do. This meal was an attempt to create that environment here in our home, even though I’m allergic to it, and could only pretend to eat it. My first thought was blistered tomatoes. Look it up, it’s really a thing. Then I thought, no, the kids won’t go for that, so went in a slightly different direction. In the end, I made the right choice because the kids enjoyed the meal, even though it was something totally new and different. From my heart to your tummy, I truly hope you enjoy this one. Well, not that I don’t want you to enjoy the others, just make sure you serve yourself a $400 portion 🙂

Speaking of portion size, that has become a bit of a joke in our kitchen. The kids will sample dinner and tell me if they would like a $10 portion (a lot of food) or a $400 portion (just a little). Cracks me up.

Strawberry Milkshake Recipe

Anyone up for a simple, scrumptious, organic strawberry milkshake? The kids loved it, because, sugar. Let’s be honest though, sometimes, it’s OK to let your hair down and have a little fun. I made the kids these shakes as a Friday night treat to go along with their movie.

I’ve learned that homemade milkshakes are all about getting the ratio right. Usually, the formula is ice cream + milk. If your ice cream is still on the hard side, more milk, and vice versa. However, when there’s fruit involved, you can usually skip the milk. Just be sure you’re using fresh fruit, or fully thawed frozen fruit.

Organic Stuffed Beet Recipe

The stuffed beet cup was something I wanted to do just for the fun of it. I think as a side dish, especially at a small dinner party, it’s fun to have around. It’s really simple, and you can interchange the steamed veggies with whatever you fancy. The kids really like steamed broccoli and carrots, so that’s what I went with. A little note about flavor: Kid Two, Kid Three, and I all agree that a roasted beet has the texture of a buttered potato. We don’t know why, they just do. Enjoy!

Last week was Stuffed Vegetable Week here on the blog, and I didn’t have enough time to share this gem with you, so here it is. This was deemed to be juicy and delicious by The Papa, the kids, and one of their cousins who was over for a visit.

A note about the honey. You see, I was measuring it out when the whole lid popped off and honey went everywhere. If I had to guess, it was 2 TBSP. I was planning to use 1.5, but there could be as much as 3 TBSP, so please use your best judgement on this one. SO sorry. And we didn’t even get a funny picture of it happening.

We were had by the peppers. I tell the kids whenever this happens that this is the “price” we pay for organic. You win some, you lose some. You’ll see in the image that there are 5 cute little peppers, one for each person. However, much to our surprise, all but one was bad on the inside. What amazed us is that they were all so perfect looking on the outside. Yet, I was able to do a small victory dance because hey, at least I got one to take a picture of.

Stuffed Breakfast Black Radish

Stuffed Veg Week has been a lot of fun for me. I’ve been able to introduce the kids to new vegetables we normally pass over, and I’ve also learned how hard it is to hollow out raw vegetables.

I made these Radish Cups for the kids for breakfast, and they LOVED the bacon. Hehe. They liked the radish chips, but no one was brave enough to eat the radish cup itself. If you have kids, I think you can agree this is a win. Anytime we can get them to try new foods, it’s a good day.
