Pumpkin Brownie Bars

It’s that time again! Time to start creating all things pumpkin flavored. This is our first of many new pumpkin recipes. Be sure to check back for our savory pumpkin pasta, pumpkin truffles, pumpkin ice cream, and pumpkin freezer sandwiches.

These pumpkin brownie bars came about as we were working on our candy bar project. The “cake” layer of our candy bar has been deemed amazing. With that in mind, I knew we had to try other flavors to see what would work. Rather than make a pumpkin candy bar (yes, I seriously considered it), I opted for a brownie bar just for fun.

If you’re dairy, tree nut, and coconut free, you may need to make your own ice cream at home. Making vanilla ice cream at home using an ice cream maker with a compressor is super easy, and very tasty. You’ll need to have a safe milk base, such as Good Karma Foods Unsweetened Flax Milk, or something homemade. We make homemade oat milk ice cream that’s top 8 free and corn free using the fresh oat milk that we make for our bakery. Now that you know some of the story behind this creation, on to the recipe!

We’ve teamed up with Barney Butter to bring you this recipe, and there’s also a giveaway on the Instagram feed this week for their product. When making this, I wanted to create something that was simple and delicious, then it morphed into a bar, which I’m totally OK with. On its own, our low/no sugar kid says this is new favorite cookie. While it’s not Paleo, it’s so simple that you can swap the oat flour for something else.

Did you see our last yogurt bowl idea post? This is another idea, in hopes to give you inspiration for allergy free goodness. I personally thought it would be fun have to this one be “baby and me” style. This bowl features So Delicious dairy free coconut yogurt, frozen organic wild blueberries, Go Raw organic watermelon seeds, organic kiwi, and organic banana.

To make kiwi stars, I peeled the kiwi, and cut thick slices. Then I used a small, metal, star cookie cutter. Everything else is just careful, photo ready, placement. Funny thing is, it does take quite a while to get these bowls ready for their picture. Happy eating!

Who doesn’t like tropical fruit? My kids absolutely love mangoes, so much so that we often have mangoes in all three major meals of the day — in our smoothies for breakfast, in our salads for lunch, and in our Thai curry for dinner. It seems like I can never buy enough mangoes at the store!

It became obvious to me that my kids wanted to add mangoes to their dessert, too, specifically in the form of cake, their favorite kind of dessert. So, being the amazing mother and spice queen that I am, I decided to make a Vegan Mango Cake and add a spicy ginger kick to it.

Have you ever seen Chia Pods in your local grocery store? I saw them a very long time ago, and Kid Two really enjoyed them, but only certain flavors. No one else seemed to like them, and I wasn’t in love with the price. After thinking about the ingredients, I set out to make them myself. That was over a year ago. The boys have been in love with every flavor I’ve created, including vanilla and mango. They also know how to make these on their own now. Chocolate however remains king of the flavors, as it is requested the most. This rendition includes banana, and everyone was happy to have it. What I like the most about this is that it’s coconut free. All too often, healthy chia puddings call for either almond or coconut milk. Well not these. However, if you’re grain free, you could sub in a milk that you enjoy. These work great as a breakfast, snack, or dessert. Once you’ve made them once, you’ll see how the ratios work, then I suggest you go wild and start making all sorts of flavors.

I just wanted to share this simple idea with you. Smoothie and yogurt bowls seem to be quite popular online, so I figured we should make one, right? We used So Delicious dairy free coconut yogurt, and topped it with Nature’s Path gluten free chocolate rice cereal and organic banana slices. That’s it! It’s super simple, the kids loved it, and it photographs well. Enjoy!
