Organic Creamy Chicken & Zoodles
I am so excited to share this recipe with you!! I feel like it’s a healthy foodie win! What I love even more is the simplicity of it all. A lot of the flavor from this dish comes from the base ingredients, and the cream it what pulls it all together. Ready?? I am!

Paleo Fried Zucchini
This was our first time making a fried vegetable, and it was SO upset! Here’s why: As soon as I had the first few slices ready, certain people who will remain unnamed walked by, and ATE THEM ALL! Then, they said, what? They tasted so good I couldn’t stop eating them… As if to compliment me… I hadn’t even gotten a picture yet. Sigh. You see the crazy life I have to live? Needless to say, everyone really wanted to have the last bite. They were also more than willing to eat the few that were a little overcooked. I will say, I felt like these required a lot of work, so maybe it’s great for one person to chow down on. Making them for a large crowd may be a little trying to one’s patience, yet, truly a labor of delicious love. I will try making these again however, but next time I’ll see if there’s a faster way to get these done.
Before we get into things, let’s talk strict Paleo first. For these to be egg free, we used a vegan egg replacer, which doesn’t claim to be Paleo. It’s essentially gums working together to make a binder. If you are strict Paleo, or AIP, you will need to use an egg or egg replacer that you’re comfortable with. I will add that you may not even need the egg at all. I think water could do the same job, as you only really need something to hold the tigernut flour in place.
In addition to the egg, there’s the question of cheese. Some Paleo eaters enjoy cheese, while others don’t. Here’s a link to a great site with Paleo cheese alternatives you can make at home. See? Everyone wins!!

For Nut Free: Don’t use Parma! Vegan Parmesan Cheese. Instead, use a dairy based cheese, Follow Your Heart DF Parmesan Cheese, or another alternative of your choosing.

Organic Mashed Potato Zucchini Boats
Have you ever seen a Viking Potato? I hadn’t until very recently. It looks similar to a purple potato, but the color of the skin is more muted. When I saw them, I knew purple mashed potatoes we’re going to be on the menu, because a Viking Potato is much larger than a regular purple potato. Boy did I have a surprise waiting for me! I get the potatoes washed, and start to peel them, and THEY WEREN’T PURPLE INSIDE!!! I was shocked, then totally disappointed. After I shared my grief with those around me, I kept peeling potatoes because the show, and dinner, must go on. The good news is that the lack of purple didn’t make these potatoes any less delicious!

Maple Balsamic Fig Chicken & Zoodles
It’s been such a roller coaster ride connecting with so many people online. It’s strange at times because we’ve been on this journey for so long, and turns out, my distaste for the internet shot me in the foot. Funny, coming from a we designer and IT person. Needless to say, I’ve tried to make a personal connection with each new person because honestly, all we want to do is help others go through this. There’s simply no reason to suffer etc. if someone else can lend a helping hand. The cool thing is that it’s giving me unique opportunities to create new things that I may have never even considered because, well, children. Those of you with kids know what’s up. Balsamic for children? I say yes! Well, now that I have a great reason to 🙂
Today’s creation came about after a conversation on Instagram with @eatingwellwithrochelle. She reviews products, and sometimes recipes. So, I wanted to create something, and she likes savory. It got me to thinking about all the fancy food I wish I could eat, and like Manna from Heaven, the idea fell out of the sky. So here it is. Hope someone out there can really enjoy this for me. The Papa says it’s nice, in a foodie sort of way.
