Have you been able to watch our Instagram Live Streams on Mondays? If not, see if you can start tuning in. Each week we go over different recipes, field questions, give tips, and even take requests. These brownies were a request from a user needing a little help in the baking department. Here on the blog, there’s the Free Brownie Recipe. Over at the Bakery Website, there’s the Free Kit Card Download of a different brownie recipe (and a topping too). This was something totally new because this person didn’t want a brownie that too oily. To achieve that, I started with the Kit Card version, then modified 🙂

On the Live Stream, we also showed people a really cool topping idea for people who may want to make Brownie Bars, as well as Candy Stuffed Brownies. So, here’s several recipes, links and product information (none of the links are affiliate links) and yummy pictures too. Happy Earth Day!

Allergy Status: Gluten Free, Wheat Free, Dairy Free, Egg Free, Soy Free, Nut Free, Peanut Free, Rice Free, Yeast Free, Seed Free, Gum/Binder Free, Vegan

Brownie Ingredients:
4 ounces Dairy Free Butter, room temperature
2 cups Organic Sugar
1 cup Raw Organic Cacao, packed
1 1/3 cup Super Fine Sorghum Flour
1/2 cup Organic Oat Flour
3 tsp Baking Powder1 tsp Sea Salt
1 TBSP Organic Vanilla Extract
1 cup Organic Extra Virgin Olive Oil
1 cup Water
6 ounces Milk of Choice
2 tsp Raw Organic Apple Cider Vinegar

We were asked if this could be done by hand. The quick answer is yes. The real answer is that it will take a little extra elbow grease, mainly because of the butter. You want to make sure that it’s evenly mixed in, and not clumpy throughout.

Start by adding your butter and sugar to a mixing bowl. You can cream it with a paddle attachment, or use your wire attachment the whole time. If you use the wire attachment, it will be a bit clumpy at the start, but by the time all of the ingredients have been incorporated, it will be smooth.

After the butter and sugar are in, add in the rest of the dry ingredients and mix together. Finally, add in the wet ingredients, and mix until smooth. Once everything is smooth beat on high for 20 seconds. Portion into the style of brownie you would like (muffin, bar, mini cupcake, etc.). Baking times will vary. We did 350 for 30 minutes as large muffins, and a 9 x 12 glass tray. The Square glass dish that was filled higher required a longer bake time.

6 ounces Spectrum Organic Shortening
1 bag (4 cups) Organic Powdered Sugar
2 tsp Organic Vanilla Extract
1/2 tsp Sea Salt
4 – 6 TBSP Water

In a mixing bowl, use your paddle attachment and whip the shortening. Next add in the sugar, salt, and vanilla. Pulse a few times, then add in 3 tablespoons of water. Mix again. Continue to add in water, one teaspoon at a time, until you’re happy with the consistency.

Additional Optional Mix-ins: No Whey Chocolate Candies, Surf Sweets Vegan Gummy Worms, Tru Joy Organic Candy Canes, India Tree Natural Colors, Sadaf Rose Water, Pascha Chocolate Organic Chocolate Chips.

About The Brands We Use
One of the things that I really like about the Instagram Live Streams is that people get to ask about the brands that we use. I normally don’t put all of that information here on the blog because many of you already have your go to items that you like. I’m going to outline a lot of the brands that we use, and why.

Earth Balance Dairy Free Butter – We use one that only seems to be available in a 30 pound box. Yes, 30 pounds. Remember, we have a bakery, so it makes sense for us. It’s dairy and soy free, and not made in a shared facility. Interestingly, with their new website, I can’t seem to find it there anymore. We get ours via special order.

Kirkland (Costco) Organic Sugar and Organic Extra Virgin Olive Oil – They’re both made in top 8 free facilities, and for the bakery, we buy in bulk. Do you remember a couple of years ago when the expose was done on fake olive oil? Costco was one of the brands tested, and passed the test. Phew. I was so proud to be a Costco member that day.

Raw Cacao – We get this Wholesale from Oregon, from a company that’s a top 8 free facility. Most popular brands in stores are made in a facility with nuts.

Singing Dog Organic Vanilla Extract – Again, a top 8 free facility, and they say the alcohol is sugar derived. I still don’t trust it for a corn allergic, but that’s what they said. We get a wholesale version.

Braggs Apple Cider Vinegar

Oat Milk – We make fresh milk here for the bakery.

Organic Oat Flour – They have great methods, and are also corn free. How epic is that.

Baking Powder – Hain Featherweight. We use this because it has potato starch instead of corn starch. With my severe corn allergy, we try to keep as much straight corn, and corn derivatives, out of the kitchen. What’s weird is that no one seems to able to get this in the stores anymore. When I called them directly, they said it’s only on Amazon. I don’t know if that means they will discontinue it anytime soon, but I do know we plan to purchase a LOT of it.

Authentic Foods Super Fine Sorghum – Superfine is not the same as regular. They sell both. It’s a corn free product, and that’s why we love this brand.
