Dessert Date Pasta (Sauce) Recipe

If you were to ask Kid Two, he’d tell you that I saved the best for last. He couldn’t stop raving over how good this sauce was. It was rich, deep, and tasted like dessert. However, he did tell me later that it’s like pasta or cream sauce, you can’t eat too much of it. Yet, it was soooo good, he still wanted more. Makes me giggle to myself thinking about it.

Organic Chicken Pasta (Sauce) Recipe

Can you believe Non-Traditional Pasta Week is almost over? The week has zoomed by so fast. I hope you’re having a great time in the kitchen trying new recipes! Today’s pasta sauce was inspired from Sweet Curry Chicken Fried Rice. It’s in our Everyday Meals volume one cookbook. It also comes from something I use to make the kids when they were much younger – pan-fried chicken thigh. I would prep chicken thigh, and let it cook in butter. Honestly, it was that simple. Add a little salt, and they were all happy. One of my favorite personal features about this sauce is the veggie inclusion. They’re masked a bit, and I love knowing that the kids are eating plenty of vegetables. If you’re not a fan, or would prefer a different vegetable, make the change. I hope this brings warmth to your tummies!

Black Bean Pasta Recipe

Welcome to Wonderful Wednesday. Well, I hope it’s going well for you because that alliteration felt so good. As we continue Pasta (Sauce) Week, it’s important to remember there are some people who can’t have tomatoes and/or nightshades, in addition to many other things. This recipe is for you 🙂

The original concept of this dish was a cold pasta salad and as usual, it morphed into something unique to us. The great news is that Kid Two and Kid Three really enjoyed the dish. The Papa, who doesn’t like beans, and who really doesn’t like the GF noodles said that “it was really good for what it is”. Yes dear friends, that was a compliment. We learned that this is tasty eaten both warm and cold, but I think Kid Three enjoyed it more when it was warm, and it has to do with these particular noodles. Once most gluten free noodles are cold, they’re not nearly the same. Friendly remember, these Non-Traditional Pasta recipes are designed to be guides, and to get your creativity flowing, as many of you have quite limiting dietary options.

Cranberry Tuna Pasta (Sauce) Recipe

Our Non-Traditional Pasta Sauce of the day is Cranberry Tuna. This is a play on the fact that Kid Two loves tuna and loves cranberries. You’ll notice throughout the week that each sauce does not use sugar like conventional pasta sauces call for. Instead, each one calls for a natural sweetener to liven things up. You could always reduce the amount of fruit used, or go without it completely. These recipes should serve as a guide and/or idea generator 🙂

Allergy Status: Wheat/Gluten Free, Dairy Free, Egg Free, Soy Free, Nut Free, Peanut Free, Yeast Free, Corn Free, Cane/Refined Sugar Free, Sesame Free, Legume Free, Diabetic Friendly, Paleo, GAPs, Vegan Compatible, Onion & Garlic Free

For Vegan: Use a vegan, fish free tuna, such as this. However, if you’re avoiding soy, you may not be able to find a safe product.
For Corn Free: Source safe ingredients. Consider using a no-salt can of tuna, and adding a little extra as you cook. Also make sure that the cranberries are safe for you. Some brands have sulfates, and others add cane sugar etc. to the mix. Yellow Barn and Bio Naturae are safe tomato sources at the time of this writing. Read More

It’s (Non-Traditional) Pasta (Sauce) Week! This is the first of five very special creations to be released. Do we have time for a story? Great. Gather round everyone. So, in the food allergy world, the Top 8 get most, if not all of the attention. I can completely understand this from a marketing and squeaky-wheel standpoint. However, I’m not called the Top 8 Chef. I’m called The Allergy Chef. My goal has always been to cater to everyone, and perhaps that mission may get the best of me someday, as you can’t please everyone all the time. Nonetheless, that won’t stop me from trying to create dishes that everyone can enjoy. I’ve recently heard from several people about their onion, garlic, nightshade, and “traditional” spice allergies. I had one person ask for ideas on how to not have bland pasta. My first answer was, truthfully, I eat plain food because that’s all I can have. I then listed off many different ideas they could try, and they were thankful. It was that very conversation, and one other in particular, that lead me to create these recipes. It’s so easy in the allergy world to meet the needs of most people, but I want to make sure that no one slips through the cracks around here. OK, story time is over. Pack up your blankets and pillows. We have food to cook.

Organic corn free pasta pesto and bread

St. Patrick’s Day part 2 of 3 – Pesto

So, here’s the idea for this year: start with the Avocado Rice for lunch, then, incorporate this awesome pesto into your dinner. I suspect that you will really enjoy this sauce.

You have to know, I have been dreaming of pesto for some time now, and decided to get brave. I searched quite a bit for a pesto recipe that I could modify, but everything was calling for cheese and nuts (as a dairy free option). I didn’t have nuts on hand, and in all honesty, didn’t like the sound of it. Needless to say, I had to make something up, and well, it was really good. This recipe has such a nice, natural creaminess to it, as if there were a nice cheese mixed in. It’s really exciting actually.

Organic Rice with Organic Red Lamb Dish

When I made this, it was so good, as the low simmer really gets the flavors to sing. I tried to re-create this after making it a couple of days later, and it was just not the same. I was in a rush that day, and the simmer didn’t happen, and I was bummed. So this is your friend letting you know: You gotta let it simmer! This is a dish that would also work well in a slow cooker.

Organic Corn Free Red Sauce Recipe

This is my go-to recipe for making red sauce, and it’s usually a hit. We use it on pastas, as a dip, and well, anything else I may get creative enough to use it on. It’s also a wonderful foundation for making sauces for stews and other dishes.
