Savory Waffle Bread

Remember the Waffle Bread recipe I posted a while back? As promised, I experimented a bit and have an additional version to share with you!

If you’re living with food allergies, I can’t encourage you enough to get brave and experiment in your kitchen. If you’re new to cooking or baking, experiment on recipes that you have mastered. For example, take a basic pancake recipe, and experiment with adding cinnamon and nutmeg. Small changes can make BIG differences, and this recipe is an example of that.

Waffle Bread & Muffin Bread Recipe

OK, I’ve regained my composure, and I can speak calmly with you about this amazing, yummy, texture right, bread. Do you know how long it’s been since I’ve had bread…. Ener-G use to have a tapioca loaf that was ok, then they added xantham gum. I’ve been without ever since. I digress. Back to the bread!

I had an epiphany some time ago, and have been waiting to find the right moment to try this idea. I got to thinking… my pancakes taste good, and the texture is amazing. My waffles taste great, and I love the texture. The texture of the muffins were great too. Therefore, would it be safe to assume that I could make “fake” bread by changing the ingredients a bit?

As it turns out, you can. After doing a lot of research on gluten free breads, I tried to create something that was corn free from what I found.

Pumpkin Bread Cupcakes Recipe

So The Papa took the kids out, and I was home alone and got creative. I had an old pumpkin bread recipe that I found several years ago, but of course, can’t make with the allergies. Needless to say, I worked a little kitchen magic.

One of the things I didn’t photograph was what I did with the extra batter. There was a small¬†amount, so I lined a jelly roll pan with parchment paper and spread the batter over it. I baked it, and when it came out, it was like an amazing cloud. It was like a thin cake bread fusion. I strongly suggest you try it with this frosting recipe.
