Navitas Immunity Caramel Bars Recipe
We’ve partnered up with Navitas to bring you a few new recipes featuring their new Superfood Boosts, which are amazing. What’s even better is these boosts are organic, gluten free, and vegan, meaning they’re safe for many to enjoy. Today’s recipe features the Immunity Boost which is full of healthy fruits, vegetables, antioxidants, and enzymes.
Now, if you’ve been a long time reader of the blog, you know that I look at things totally different from those around me. Show me a product (and tell me what it should be used for) and I’ll imagine many other ways to use it. In fact, when I first met the Navitas rep and he showed me the Boosts, I said, “This would make a great cookie.” He was totally caught off guard as he had never thought to use it that way.
I share that to say this: don’t let food allergies and special diets stop you from creating awesome food. In fact, use your “weakness” as a strength. In the case of these Boosts, I wanted to make them the strength of a dessert 🙂

For Nut Free: Omit the coconut sugar and replace with additional maple sugar.
For AIP: Omit the flax seeds. You will need to add 1 extra Tablespoon of cassava to your filling. Also know that the removal of the flax creates a more crumbly bar (that still tastes delicious).

Pineapple Chicken Pizza
Did you know we’re working on a pizza book? With that in mind, the poor kids have to eat homemade pizza creations on a regular basis. I know right? This is one that I thought may not be as great as I had dreamed up, but then they told me it was really good. I’ll probably make some more tweaks to it before I deem it book ready. You should give this a go if you’d like to have something different.

Gluten Free, Beef Free, Corn Free, Corn Dogs!!!
Do you hear that friends???!!! It is truly the sound of success!!!! You see, back in the day, before we knew about the wheat allergy, the kids would often eat corn dogs. There’s a gluten free one made by Applegate, but, it’s beef based. So, our allergy kid hasn’t had corn dogs in may years. So, on day, I was online and saw a Tasty Video, and that’s when it hit me. I could make him a corn dog. It was like the clouds above had opened and angels were singing. I kid you not, there was so much singing and dancing and giddy all around joy in the kitchen when we made these. In addition to this post, we’re working on a video for the Youtube Channel 🙂

CORN FREE Chocolate Pancakes
Remember the collaboration with Hannah from Purely Positive Foods last month? Well, in addition to making an apple pancake, we also made Chocolate Corn Free Pancakes. I for one am so excited about these, and everyone who tried them was more than happy to gobble them up. Are they like a traditional pancake? Not even close. Are they safe to eat? Yes, and that’s what I focused on for this recipe.
I feel it’s important to say that sometimes, when crafting allergy free food, especially corn free, you have to forget what you know about taste and texture, and learn to revel in the safety of the food first. From there, start tweaking and enhancing until you find what you like. The journey is long, but the reward is great.

Organic Cheeseburger Salad
We teamed up with @ibcgourmet on Twitter, to bring you International Salads. Bring from India, @ibcgourmet opted to create a delicious Tandoori Chicken Salad. I personally can’t wait to give her recipe a go. Here’s the link to her blog post. Here in the United States, I thought of Cheeseburgers. They seem so American, so I present you with an Organic Cheeseburger Salad.
Have you ever been to Red Robin or BJ’s? I’ve only been a few times, maaaannnnnyyyy moons ago, and that’s what came to mind when I thought about an American cheeseburger. There’s also In-n-Out, and a few other iconic places, most of which I’ve never been to, and probably won’t be able to visit. With all of that in mind, I had thought of so many fancy ways to make a salad, and that’s when it hit me: simple. Sometimes we get so caught up in long titles for our dishes we forget to feature the main ingredients. This time, I did just that. This is a very flexible recipe, and you can add additions to your salad, just as you would to your cheeseburger.

Corn Free Spiced Apple Pancakes
It has been quite a busy season around here, but we must keep moving forward 🙂 We’ve been working on several collaborations right now, and this is one of them. We’ve teamed up with Hannah from Positively Pure Food. She has an AMAzing Instagram Profile, here’s the link. Like me, Hannah creates awesome allergy friendly recipes, so be sure to follow her for yummy ideas.
Together, we decided to come up with holiday CORN FREE pancakes. That’s right folks. Hold on to your seats. While most of you don’t have a corn allergy, those of you that do understand how difficult it can be to source safe ingredients and then get said ingredients to work together to form something just right. Organic Spinach, Chicken, & Mushroom
We made a very special dish for someone recently, and The Papa says it turned out well. I will say, I don’t think this one is very kid friendly. It’s definitely for the grownup, or kids and teens with adult tastes. Additionally, I feel that this is a great springboard for making something awesome. Have some extra Thanksgiving stuffing? You could totally add that in for something extra tasty. Apples would also add a lovely touch.

Like Watermelon Cake, this one had me giggling on the inside all over again. The kids LOVE to make homemade pizza, and when I told them we were having mushroom pizza for dinner, they were excited. The last time I used mushrooms on pizza, I took the fancy road and purchased exotic-to-us mushrooms and made the kids Lobster Mushroom Pizza. There were several other fancy mushrooms on the pizza too.
Back to this meal. So Kid Three was more than happy to help, but he was confused because there was no pizza dough to be found. As I started to prepare the mushrooms, Kid Two says “OH! Mushroom Pizza!” Yes… Mushroom Pizza. I hope you have just as much fun with your family serving these as I did. FYI, we made dairy, and non-dairy versions, which you’ll see in the pictures.

Paleo & GAPs Maple Bacon Ice Cream Recipe
Did I tell you the kids love bacon? Especially Kid Two. He just loves it. And they all enjoy trying the “fancier” packages from Good Eggs from time to time. I will say though, they’re not at the extreme level yet where they want bacon covered chocolate. So, I got to thinking about ice cream one night, and BOOM! Maple Bacon Ice Cream. Bacon? goooood. Ice Cream? goooood. Maple? Greeeat, because Kid Three tolerates it much better than cane sugar. I knew in that moment that because bacon would be involved, it had to be Paleo so everyone could have a nice big bowl of it.
