Allergy & Grain Free Veggie Stuffed Pork & Cauliflower Rice
We teamed up with Bentology to bring you this recipe (and another that will be posted soon). They have a really great lunch product you may enjoy. The premise is that it helps with portion control. Their bento-style lunch box comes with 5 containers, each with an image of what should go inside, such as vegetables. It’s a great visual reminder for adults who want to eat healthy. Allergy Free Organic Mashed Potatoes Done Two Ways
Every so often, I like to find a new way to do something old. Who am I kidding. I do this all the time. For those of you that know me, you know how much I don’t like doing the same thing over and over again. The kids know this so well, which is why they end up having the weirdest items added to food, like these mashed potatoes. You would have laughed had you seen the looks on their faces when I asked if they thought maple in mashed potatoes would be a good idea. I get looked at like I’m crazy more times than you’d think. YET!! I hear “oh my goodness this is delicious” more times than I can remember. I guess crazy in my world is delicious in theirs, or vice versa? Hehe. On a side note, thanks for reading. I get so many giggles when I write these little messages to you. I hope you can hear the smile in my fingers.

Delicious Organic Rice Cookup
This came about for a few reasons, mainly, I didn’t feel like cooking meat, and, I had a variety of various fresh ingredients available. Another big reason is that I like to push myself to omit things like tomato, onion, garlic, and parsley when I can, so people with less common allergies can enjoy a good recipe too. Kid Three is a serious meat eater. He really cracks me up sometimes. However, I think it’s important for people to enjoy eating all sorts of meals, and really focus on flavor, texture, and the joy of the company they’re with. This dish would be great also made with organic quinoa if you’re a fan, or don’t have any rice handy.

Organic Lunch Ramen
It’s only fair that lunch time is given its very own ramen recipe. We’ve done Breakfast Ramen, and Dinner Ramen, so it’s time. If you have more than one child, or a starving teenager, you know the importance of having things on hand to make quick meals that are satisfying. Lately, I’ve really been getting into that being ramen! On a personal note, what gets me sometimes is that I’ll go and create big batches of food and leave it in the fridge for the kids to eat during the week. What do I hear? I’m hungry… there’s nothing to eat… Oh, I don’t like eating xyz cold… Really guys??? What was the point of all of that work? In the defense of Kid Two, I can say, he never says this. In fact, he likes his food cold… Anywho, back to the recipe. I feel this is a great time of year (assuming you’re reading this when I first posted it) to pull out the ramen recipes. It’s so cozy and warm… just right for the cold afternoons.

I’ve always been fascinated with spaghetti squash. It’s so cool to shred it and see “pasta” strands form. I once had it in a soup I purchased from Mission Heirloom, and I knew I had to try it out. There’s a safe farm that I can buy produce from on Good Eggs, and sure enough, they had just what we needed.

Organic Chicken & Sweet Potato Soup
Kid Three wasn’t feeling well, so I decided to change course make the kids soup. They said it turned out really well, so it’s a good thing I wrote everything down. As I was getting ready to prepare the soup, I had the thought to add some unconventional soup ingredients. I spun it to the kids as “it was extra healthy and healing” and I think that made them like it even more.

Corn Free Tuna Lunches
It’s not often that I get to share my food with you, but today I will. I think I generally don’t because I see it as too simple, or sometimes a bit too out there, even for people with food allergies. I’m also fully aware that I have the strangest eating patterns. I think it’s how I cope with the disease. Many of you out there I’m sire know exactly what I’m talking about.
The two dishes here are both tuna based, and were delightful to eat. For those of you that really know my story, you know that I’m allergic to just about everything I eat. I was given a choice – eat was gets to me the least, or starve to death. There are no tubes that can save me, because I’m allergic to the food solutions. I can’t do what most people do, because even water is an issue. After having these meals, I can say that I won’t be eating them again any time soon, however, for a few days, it was sort of nice.
