I have no idea where the inspiration for this dish came from, but the kids were more than happy that it came. This dish pairs two of their favorite things in the world: my pan seared & baked potatoes with cheese. Kid Three is a cheese-o-holic. If he could eat a pound of cheese  day, he probably would… I’m not even kidding right now. Kid Two likes his cheese as well, but have you seen the price of dairy free cheese lately? I have to ration that stuff out. Interestingly, he prefers the yellow Daiya cheese to the white, yet, really didn’t mind this fancy sauce one bit.

Organic Mashed Potato Zucchini Boats

Have you ever seen a Viking Potato? I hadn’t until very recently. It looks similar to a purple potato, but the color of the skin is more muted. When I saw them, I knew purple mashed potatoes we’re going to be on the menu, because a Viking Potato is much larger than a regular purple potato. Boy did I have a surprise waiting for me! I get the potatoes washed, and start to peel them, and THEY WEREN’T PURPLE INSIDE!!! I was shocked, then totally disappointed. After I shared my grief with those around me, I kept peeling potatoes because the show, and dinner, must go on. The good news is that the lack of purple didn’t make these potatoes any less delicious!

Organic Seasoned Potatoes

I feel it’s safe to say there are hundreds, probably even thousands, of ways to cook potatoes. They’re so versatile, and lend a great texture too! The kids (and their friends) are simply in love with my cubed potatoes, but here’s the fun part: I try to season them differently each time. Part of the reason is to push myself to make new combos, and the other reason is to introduce the kids to new flavors. Cubed Potatoes was how I introduced them to turmeric of all things. Everyone went wild, and they’ve been served at numerous class parties. Today’s recipe was created in conjunction with tomorrow’s recipe (so make sure you come back). Standalone, they’re great. Together, they’re even yummier.

I can totally see someone making these potatoes and serving them with eggs, or salsa, or avocado, or a cut of meat, or tomorrow’s brussels sprouts, or anything else that suits their fancy. Hope you love these!

Hasselback Potatoes Recipe, A Three Course Meal

For those of you that come to visit often, you know how much of a foodie I am, or at least, want to be. Do you ever notice in life that people with a disability of any sort usually go on to conquer something that challenges that disability? Like one-armed tennis players… That sort of thing. Seems like it’s only natural that a person with severe food allergies with come up with all of this stuff. Anywho. The potatoes. Have you seen them online? They’re GOR-GEEEE-ous! I’ve been wanting to do this, and the right need came up.

As our social media presence grows, I’m meeting all sorts of people with all sorts of allergies. @chronically_kota and I were chatting about her needs, and the sorts of things she missed, so I created a very special 3 course meal. I really hope that this not only makes her day, but yours too.

Before we move on however, I have a confession to make. There aren’t many pictures. We tried to make this one of our first video posts… the video… may it rest in peace. And, you’ll love this. I plated the most perfect of the four, and accidentally let the kids eat it before I took a picture. It had fanned out just right… it’s OK to cry for me.

I know there are so many of you out there that are just like our family: real people that wake up late. On days like those, this is an awesome breakfast you can put together if you’re not a fan of cereal etc. Some evenings, I’ll plan for something like this and cut the potatoes ahead of time, thus making the morning even faster. This version of our breakfast potatoes may go down in history as one of the absolute best. The kids and The Papa went on and on with every bite about how delicious these potatoes were.

Indian Inspired Spiced Vegetables

The inspiration for this dish came from several places. First, we had some potatoes that needed attention. I hate wasting food, so they needed to be used asap. We also have this new rule in the house: if I can’t take a picture of it (for a book or a blog) then I’m not cooking and you have make something yourself. No one was around to do the cooking, so I had to get inventive.

Lately I’ve been wanting to do more with traditional Indian spices. I’ve dabbled a little, but have been wanting the kids to experience new flavors. In the past, I’ve done many variations of “pan/baked potatoes” and wanted to do them again, but with more colour and well, just different. I had recently purchased Indian spices and had the kids try them (with frosting), and decided to go on an adventure. Kid Two and Kid Three went with me, and seriously wanted to eat them all. They had to wait for The Papa and Kid Four to come home, and for some strange reason, couldn’t stop asking when they’d get here so dinner could be served.

Quartered Red oh-so-delicious Potatoes Recipe

I have a feeling that potatoes, like pizza, are simply loved by most children, no matter what the country of origin. Our kids love all things potatoes, which has given me the freedom to introduce different flavor profiles to them, including curry and turmeric. This rendition of our quartered potatoes is by far one of their favorite.

You can mix these in a bag, similar to a shake and bake style, or you can season in the pan directly. I tried it both ways, and in all honesty, I didn’t see a huge difference in the two batches.
