Organic Turkey & Peppers over Cauliflower Rice Recipe
Do you ever feel like you have to dig really deep to find a new way to cook ground turkey? This was one of those times, and it turned out really well. Originally, this was going to be a salmon dish, but I forgot to add it to the grocery list. I know you know the feeling of “I’m so tired of cooking” so I hope this recipe finds you when you need it the most 🙂
A little reminder: Kid Two is allergic to beef, and so am I. This would be a great meal to substitute in ground beef if you’re able to have it.

For SCD: Use a safe season blend on your turkey.
For Corn Free: Source safe ingredients. You may need a homemade season blend for your turkey, and be sure you’re getting truly corn free (and unwaxed) peppers.For this recipe, we will be cooking each element on its own, then combine the meat and peppers together at the end, and serve the mix over the cauliflower rice.
For the Ground Turkey:
1.5 pound Organic Ground Turkey
1 tsp Simply Organic All Seasons Salt
2 tsp Organic Onion Granules
1.5 tsp Organic All Purpose Seasoning
Heat a large non-stick pan on medium-high heat (400) and cook your turkey. As the meat cooks, break it into small pieces. Add your seasonings when the meat is about half way cooked. Once finished, remove from heat and transfer to a bowl or plate (so you can reuse the non-stick pan).
For the Peppers:
16 ounces (Frozen) Organic Peppers
For this meal, I used a frozen bag of peppers. Heat your non-stick on high heat (425) and cook the peppers. Cook for 8 – 10 minutes, stirring regularly. The main goal is to thaw and heat them.
For the Cauliflower Rice:
1 head Organic Cauliflower, grated
5 TBSP Organic Extra Virgin Olive Oil
2 tsp Sea Salt
1/2 tsp Organic Onion Granules
Heat your non-stick pan on high heat (425) and add your olive oil, then the grated cauliflower once the oil has heated. Add your seasonings, and mix well, and continue to stir regularly to prevent burning. This process takes approximately 10 minutes. You can use frozen cauliflower rice for this as well, and the cooking time will vary.
For the Meat & Pepper Mix:
Place the meat and peppers back into your pan. Add 1 tsp Sea Salt and mix well. The extra salt will go a long way. Serve over the cauliflower rice.
Alternative Serving Options:
Like many of the meals we share on this blog, this is a flexible recipe. You could serve your meat and peppers over mashed potatoes, pasta, alongside sweet potato fries, or stand alone.
